This recipe is based on one by the very gorgeous and clever Sophie Dahl. I’ve been making my own version of Sophie’s beautiful soup for years and it’s a total fave.
While it takes a little while to pull it together, most of that is in the bubbling and roasting, rather than actual toiling away. The reward is a roasty-toasty vat of rich and nourishing soup. The kind of soup that cures many ills and even pleases the people who think soup is not a ‘proper’ meal.
Also? Don’t skip making the croutons, pals, because they make something already wonderful even more magnificent.
