Big Sauce is here to make your week easier. Big Sauce wants to reach its delicious fragrance into the corners of your house as you listen to some excellent SAUCE MUSIC and dip torn-off bits of yesterday’s bread into it. Big Sauce knows that you will be sticking your nose in the pot to check it’s caramelising during those early stages and that you’ll be dancing around the kitchen as you prep (see playlist I made you below!) Or wiggling a bit at the very least. Big Sauce wants to stock your fridge and freezer with its goodness, ensuring that there is always something good for dinner because … it’s Big Sauce and there is plenty of it and it is delicious.
I make Big Sauce each week and then we eat it with various things. We might use it as a pasta base, pop it into this risotto, slather it on a pizza base, drizzle it over eggs in the morning or have it on cheesy toast in the evening. Perhaps we’ll enrich a slow-cooked meal with it? Or we might use it as the beginnings of baked beans like I did yesterday (can confirm it made them extra delicious!)
Whatever the snacky problem, Big Sauce is the answer. Here’s how to make it. This recipe makes at least 4 litres. Honestly I am TERRIBLE with numbers so if you make it, let me know how much it made for you?

Hi Pip, this is my first time here and love to see the recipe! I'll be using it today to make stuffed capsicums - simply add some rice and tuna, then stuff that cap! Delicious! :)
