When I was growing up, we had this soup on very regular rotation. It’s a firm favourite in my family and maybe it will be in yours too?
I’ve given it a tiny update because tastes change over decades, don’t they? You could also go off piste and add chives or sliced spring onions (green onions) and it'd be dandy. A sprinkling of paprika or chilli flakes would work well too, if that sounds like you.
This soup is excellent made in the vegetarian way OR not, so take your pick!
It’s my go-to soup when I’m feeling poorly and I’ve made it twice over the last couple of weeks. Perhaps it’s just the thing you need to feel a bit more chipper? I hope so!
