I love Pad Thai.
When you make it at home it’s crunchy and soothing and bracing and texture-packed. Completely different from what you might get home-delivered on a lazy Friday night - in a good way - and with the bonus a MUCH more generous yield. More bang for your buck, which is always a good thing during these cost-of-living-crisis times.
This Pad Thai-ish recipe is easy and delicious. It can be adapted with different proteins (plant-based or otherwise) and once you’ve had a crack at it I PROMISE it’ll become part of your regular dinner rota.
I mean look at it! Who on earth could resist all that crunch and spice and noodly comfort?!
