Oh hello!
A breakfast casserole is a brilliant thing, especially when it’s simmered away while you slept and cheerily at the ready when you awaken.
This casserole is ideally made in a slow cooker overnight, but you can simmer it (not overnight!) very gently on the back-burner of your stovetop too. Granted the stove simmer does not have the smug satisfaction of cooking while you sleep, but you do what you must for a hearty and delicious breakfast, don’t you?!
I know a lot of breakfast casseroles are loaded with eggs and cheese … but they are not my favourite kind. I like something a little less … chonky. And this recipe fits the bill. Have it on toast or in a jaffle … add an egg or some avocado on top if you fancy. Do it your way!
