Pizza-ish Zucchini Slice
I love Zucchini Slice!
When my eldest was little, my mother-in-law used to bring slabs of it home from the restaurant she owned with Stephanie Alexander, wrapped in tin foil and oven-ready.
It was once served as part of a ‘centre table’ lunch at Stephanie’s. This was a kind of antipasto buffet heaving with alllll the good things. The lunch was truly delicious and this simple slice, baked flatter than the usual ones I see, was my favourite bit.
The benefit of making this slice low/flat is that it doesn’t bake up too ‘wet’, a development I am sure we all appreciate. I have been having this as an easy breakfast recently, with a splodge of sriracha. So convenient to carve off a wodge and so good cold or warm, in my opinion.
This recipe is based on Stephanie’s, but tweaked considerably. That said, she’s my OG go-to for ZS!
