Just nipping in with a quick and easy recipe for you, in case you are stuck for something to cook!
This recipe is a simplified version of a dish by one of my favourite cooks, Chetna Makan. It’s super comforting and can be made in half an hour with just a few ingredients. Once you get the hang of it you can improvise and make it your own way. It’s delish fresh off the hob, but also good cold as a sort of rice salad.
Play around with the spices and chilli to make it suit you and the people you love to cook for. Be sure to taste it and season (more salt?) before you serve.
(And maybe you want to buy Chetna’s book if this sort of thing is your thing?!)
Hoping your week is going a-okay, dear reader! I’m having quiet times and eating good snacks which is my idea of a-okay!
Best wishes and squishes to you,
Pip
I'm definitely going to try this! Thanks.
